This special oolong tea was discovered relatively recently by Yuan Xing in 1870, growing high in the Qingshui Yan mountains at over 1000m. 

Whilst similar to Tie Guan Yin, this style delivers leaves that open more quickly and like a chameleon, it’s liquor can appear to change from orange to emerald with a flavour that has a mineral, pear and sweet taste. A rare but sublime delicacy from Anxi County in South Fujian.

To brew the tea Western style, steep 3–5 grams of tea leaves per 350ml of water at 100°C. Infuse for 2–3 minutes for the first infusion, then 3–6 minutes for the second infusion. It can be brewed over 3 times depending on personal taste.

This is such a nice light oolong! Very similar to Tie Guan Yin, but maybe a bit more floral? I'm still developing my palate, so find it hard to describe the tasting notes, but I definitely like it a lot!
