While they come from the same plant (Aspalathus linearis), the way they are processed creates two very different flavour profiles.
Red Rooibos: This is the traditional version. The leaves are bruised and fermented, which gives them their iconic needle-like appearance and deep, honey-sweet, woody flavour.
Green Rooibos: To create green rooibos, the fermentation process is skipped. The leaves are steamed immediately after harvest to preserve their natural green colour. This results in a much lighter, grassier taste with a delicate herbal sweetness, similar to a green tea but without the bitterness.

Rooibos is naturally sweet and low in tannins, meaning it never gets bitter, no matter how long you steep it.
Traditional Red Rooibos has a rich, earthy, and slightly nutty profile with hints of vanilla and caramel. It is full-bodied and satisfying, making it an excellent alternative to black tea.

Rooibos is one of the most forgiving teas in the world. Because it contains zero tannins, it won’t become astringent if left in the pot too long.
Water temperature: 100°C (Boiling)
Amount: 3-5g per 350ml
Steep time: 5-7 minutes (or longer for a deeper flavour)
Infusions: While best enjoyed in one long steep, high-quality rooibos can often be infused twice.

is rooibos tea caffeinated?

No. Rooibos is naturally caffeine-free from the moment it is picked. It does not undergo a decaffeination process, so no chemicals are involved.
This makes it the perfect “anytime” tea – safe for children, pregnant women, and anyone looking for a calming brew before bed that won’t interfere with sleep.
