how to brew South African tea
Rooibos and honeybush are wonderfully forgiving – unlike true teas, they cannot be over-brewed into bitterness, making them ideal for anyone who wants great flavour without precision timing.
Water temperature: 90-100°C for all South African teas
Amount: 2-3g per 350ml
Steep time: 5-10 minutes for rooibos and honeybush (longer produces a richer, deeper cup); 3-4 minutes for the black tea
With milk: Red Rooibos is delicious with milk and sweetener – a South African tradition – while green rooibos and honeybush are best enjoyed black to appreciate their more delicate character.

what are the health benefits?
Rooibos is one of the most studied botanical teas in the world for its health properties. It is exceptionally rich in antioxidants – particularly aspalathin, a compound unique to rooibos that is not found in any other plant – associated with anti-inflammatory, heart health, and blood sugar-regulating properties.
Because rooibos is completely tannin-free, it does not inhibit iron absorption – making it one of the most health-supportive daily drinks available. Honeybush is similarly rich in antioxidants and is traditionally used in South African folk medicine for its calming, hormone-balancing, and respiratory properties.

can you cold brew South African tea?
Absolutely – rooibos in particular is outstanding cold-brewed. Because it contains no tannins, it produces a naturally smooth, sweet, and incredibly refreshing cold drink with none of the bitterness that some black teas can develop when cold-steeped.
Add 4g of tea to 500ml of cold water and steep in the fridge for 6-8 hours.
Lemon Rooibos over ice is particularly spectacular – a beautiful, naturally sweet citrus drink that needs absolutely nothing added.
how should I store South African tea?
Store in a cool, dark, airtight container away from moisture, heat, and strong odours. Rooibos and honeybush are robust teas and keep well – typically up to 24 months without significant loss of flavour when stored correctly.
Green rooibos is more delicate than red and benefits from being stored away from light to preserve its lighter colour and more subtle character.
